Spicy Vegetarian Lettuce Wraps

I love Asian food or Asian-inspired food for that matter. It rivals my love for Mexican food, but I digress. Lettuce wraps are one of my favorites that I can eat without feeling guilty. It has lettuce so it’s healthy, right?

I’m a pescatarian with vegan-ish tendencies, so when I needed something delicious for dinner, but wanted a break from shrimp (if you know me you know that rarely happens), I wanted a meal that was meatless and full of flavor. Also, my mom was out of town at a conference and as the oldest, I had to play the role of teen-sitter for the week. To me, teens are like toddlers 2.0 with their eating habits, so I had to make sure that dinner was teenager approved.
Enter my Spicy Vegetarian Lettuce Warps.
This is a simple recipe, but it’s so packed full of flavor you care that they have no meat and you will not believe that you didn’t get them from P.F. Chang’s. Here’s what you’ll need.
INGREDIENTS:
1 head of green leaf lettuce (you can use Bibb, Boston, or other lettuce of your choosing)
1 bag of Beyond Meat Beyond Beef Crumbles
3 green onions, chopped, divided
2 cloves garlic, minced
½ teaspoon ground ginger (2 teaspoons fresh ginger, minced)
2 teaspoons toasted sesame oil
2 teaspoons vegetable oil
2 tablespoons apple cider vinegar (rice vinegar is probably more authentic)
2 tablespoons soy sauce
1 tablespoon House of Tsang Bangkok Peanut Sauce
2 tablespoon brown sugar
½ teaspoon of crushed red pepper flakes (use less to suit your level of spice)
1 organic carrot, grated
crushed peanuts (optional)
DIRECTIONS:
1. In a medium bowl, combine soy sauce, brown sugar, apple cider vinegar, sesame oil, and peanut sauce, stir. Add half of the package of Beyond Meat Beyond Beef crumbles to the mixture. Set aside.
2. Heat vegetable oil in large nonstick skillet or wok over medium heat. Add garlic, white part of the green onion, ginger, red pepper flakes, sauté about 1 minute.
3. Heat skillet or wok over medium heat. Add garlic, white bottoms of green onion, half of the green tops of green onions, and ginger and stir-fry for 1-2 minutes.
4. Add the remaining crumbles from the bag to the skillet and cook for 2 minutes.
5. Pour sauce and crumble mixture into the skillet and stir to coat. Cook for five minutes.
To serve, spoon the Beyond Beef mixture into each lettuce leaf. Top with crushed grated carrots, peanut sauce (or crushed peanuts), remaining green onions, or any additional toppings you like, wrap, and eat!
